I reeallly wanted some cupcakes last night so I found this awesome vegan recipe and decided to give it a go. I did a little altering so they weren't exactly vegan but they tasted great! Here is the original recipe.
For my cupcakes I used butter instead of margarine (because it's what I had), whole wheat flour, store bought cream cheese frosting that was left over from Valentines day ~ note the pink, and I didn't add nutmeg or walnuts because I don't have any. They ended up tasting just like carrot cake. Amazing! I will definitely be making them again.
i'm sure there are some good vegan alternatives to butter, but margarine isn't one of them. i'm so glad you opted for the butter. at least your body knows what to do with it.
